麥芽糖的化學結構

麥芽糖 (maltose)是一種雙糖 (disaccharide),系統名號做4-O-α-D-glucopyranosyl-D-glucopyranose,分子式是C12H22O11,是兩个葡萄糖分子來組成,出現佇發芽的麥仔,嘛存在佇動物消化酵素糖類的作用過程中。

麥芽是白色結晶物質,糖度干焦蔗糖的三分之一,會溶解佇水裡,小寡仔溶解佇酒精碳水化合物的食物佇烘炊製作過程中,因為糖類的部份分解,會出現少量的麥芽膏,麥芽膏嘛會出現佇麥仔酒的釀造過程中,成做麥仔酒的成份。

麥芽膏予人當做營養劑佮糖來使用佇誠濟方面,好比講糖尿病患者腸仔外糖份的補充,細菌培養的培養介質,藥物的製造,釀酒的發酵中間物,多硫化物(polysulfide)的穩定劑…等等。
